Quick and Easy Paella

Ingredients
- Crisco® Original No-Stick Cooking Spray
- 1/3 cup Crisco® Pure Vegetable Oil
- 1 boneless, skinless chicken breast, diced
- 6 ounces fully cooked smoked sausage (about 2 small links), diced
- Salt and pepper to taste
- 1 1/2 cups chicken broth
- 1 (14.5 oz.) can diced tomatoes, drained
- 8 ounces peeled shrimp, uncooked
- 1 cup frozen peas
- 1 cup saffron rice mix, uncooked
- 1 (3 oz.) can sliced mushrooms, drained
- 1/2 envelope onion soup mix (1/4 cup)
- Paprika (optional)
Preparation Directions
1. HEAT oven to 350ºF. Spray a 3-quart casserole dish that has a lid with no-stick cooking spray.
2. HEAT oil in large skillet over medium heat. Add diced chicken and sausage. Cook and stir until chicken is lightly browned. Season with salt and pepper.
3. ADD chicken broth, tomatoes, shrimp, peas, rice mix, mushrooms and onion soup mix. Bring to a boil. Place in prepared casserole. Sprinkle with paprika, if desired. Cover.
4. BAKE about 1 hour or until rice is done.
